Enjoy fish & chips in the gardens—Parcs style!

This season, we’ve partnered with leading Melbourne ferment and wine bar, Parcs, to take over the MPavilion Food Truck for two weekends in December and March.

(Inspired by the fishing net layer of all(zone)’s MPavilion 2022 design, Parcs chef Dennis Yong has created a ‘bootleg fish & chips’ menu, which he describes as a “punch in the face good kind of vibe.”

On the menu will be the usual fish & chip suspects: Potato cakes and dim sims. Except as with all things Parcs, they aren’t quite what they seem. The potato is mixed with pickled onions, kim-car (a Parcs ferment that’s a cross between kimchi and acar), herbs and an enoki shoyu mayo, while the dim sims are made with minced wild boar and salted wine lees jam.

The fish comes in the form of a tartare – served with preserved lemon, brined grapes and spent coffee garum, with ‘hot oysters’ (made with a house jalapeno hot sauce) to start, and an unmissable side of grilled octopus on a stick, glazed in Parcs’ household creation, ‘umami e pepe’.
